Most of us have enjoyed a margarita, paloma, and many more drinks mixed with the dangerously delicious beverage made from the blue agave plant and popularly known as tequila.

The blue agave plant, which flourishes in rich and sandy soils, grows into large succulents with spiky fleshy leaves that can reach over 7 feet in height.  The way tequila is produced from the plant is by removing the heart (piña) of the plant in its twelfth year. The heart is stripped of its leaves and heated to remove the sap, which is fermented and distilled into the drink many of us enjoy at home and restaurants alike.
